Quick and Classic French Toast

Ingredients:
Egg – 4
Bread – 4 pieces
Pepper powder – 1 pinch
Chili powder – 1 pinch
Salt – as per taste
Oil

Method:

  1. Beat eggs in a bowl.
  2. Add salt, pepper powder and chili powder to it and mix well.
  3. Heat a non stick pan and pour some oil.
  4. Now dip a slice of bread in egg mixture to coat it evenly from both sides.
  5. Now place coated bread slice on pan and cook on medium flame.
  6. When lower side is cooked and become golden, flip it and cook another side.
  7. Flip it once again and cook for few seconds. Switch of the flame.
  8. French toast is ready. Serve hot.

Stir Fried Broccoli

Stir Fried Broccoli Recipe

Ingredients:

Broccoli – Cut into medium sized pieces
Salt – as per taste
Lemon – 1/2 small
Olive oil – 2 tbsp

Method:

  1. First wash and cut Broccoli into medium sized pieces.
  2. Heat 2 cups of water in a pan. Add 1/4 tsp of salt.
  3. When water comes to boil, put broccoli pieces into boiling water. Boil it for 2 minutes and switch off the flame.
  4. Strain Broccoli from water.
  5. Now heat a frying pan. Pour oil.
  6. When oil is medium hot, add broccoli pieces and stir fry for 2 minutes.
  7. Now add salt, mix well and switch off the flame.
  8. Now squeeze 1/2 slice of lemon over it and mix well.
  9. Healthy and tangy Broccoli is ready.
  10. Serve hot.

Ingredients:

Atta/ Wheat flour – 2 cups
Ajwayan or carom seeds – 1 tsp
Egg – 3
Chopped Onion – 1
Chopped Green chili – 2
chopped Coriander leaves
Salt
oil

Method:

  1. Beat eggs in a bowl. Add salt, onion,coriander leaves and green chili and mix well.
  2. Knead dough using flour,salt and ajwayan. Take a small part from dough. Sprinkle flour on the rolling board and roll it to a roti/chapati.
  3. Now heat a tawa. Place roti on it. Flip it once small bubbles appear on the top surface (approx 10 secs)
  4. Now pour 4 tbsp of egg mixture on the roti and spread it over whole surface of roti. (from center to edges)
  5. Now using a spatula and spoon hold one side of roti and fold it at the center by joining it to the other side. Press on the edges so they stick together. Cook for few secs.
  6. Now flip it and cook another side again for few secs.
  7. Now pour some oil around it with a spoon and cook for few secs. Flip and repeat it for another side.
  8. Now switch off the flame. Cut Egg paratha into two equal halves and serve hot.

How to make Peanut Chaat OR Mungfali chaat

Mungfali chaat or Peanut chaat is a spicy, tangy and healthy snack. Munfali chaat  or  Peanut chaat is best companion of Tea as well as any alcoholic drink like chilled beer. Mungfali chaat / Peanut chaat is also healthy snack for children.

Mungfali/Peanut – 200gm,
finely chopped onion – 1,
chopped green chili – 1,
chopped tomato-1 medium,
chopped coriander leaves,
black salt-1/2 tsp,
Salt-1/2 tsp,
Chaat masala-1/2 tsp,
lemon juice – 1/2 lemon

Method:

  • Heat a pan and roast mungfali/peanut. It will take 3-4 minutes. Keep stirring.
  • Once mungfali is roasted properly, place it in a plate and let it be cool completely for 15 mins.
  • Now add all the ingredients to roasted mungfali/peanut and mix well.
  • Your chatpata mungfali / Peanut Chaat is ready. Garnish with green chili and lemon slice.

You can enjoy mungfali chaat with Hot Tea as well as chilled Beer. 🙂 🙂

Mix Veg Uttapam

Crispy, Healthy , Quick and Tasty Mix Veg Uttapam.

Uttapam is a healthy breakfast or snacks dish. It’s basically made by suji/semolina/rava and curd/yogurt  which is crisp and crepe-like, thick pancake. Uttapam is a quick and simple recipe. There are many different varieties of uttapam like plain uttapam, onion uttapam, vegetable uttapam and many more.

I love mix veg uttapam. I prepare mix veg uttapam in two different ways. One by mixing all the vegetables in the batter and other one is by placing vegetables on the top of it. Here I am going to show you the first way of making uttapam. You can check the other way here Crispy Uttapam.

Here I am going to show you how to make uttapam by mixing vegetables in batter. While making uttapam this way, just be careful while flipping the uttapam as it may break.

This can be served with tomato sauce or coconut chutney and sambhar.

Ingredients:

1 cup suji/rava/semolina
1/2 cup curd
1 chopped onion
1 chopped tomato
1/2 chopped Capsicum
Green chilies – 2 chopped
chopped coriander leaves
salt to taste
oil

Method:

  • Now take suji/rava, curd and salt together in a bowl. Mix well using spoon by gradually adding water until batter has thick yet watery consistency.
  • Now add all the chopped vegetables(onion,tomato,green chili, capsicum, coriander leaves) to batter and mix well.
  • Heat non stick pan over medium flame and add few drops of oil on the surface and spread it.
  • Now pour batter (approx. 1/2 cup) and spread it into a circle. Cook until bottom side turns light brown.
  • Flip it and cook another side over medium flame until bottom surface turns light brown in color.
  • Flip it again and cook for 30-seconds. Transfer it to a plate. Uttapam is ready.

Onion Pakoda | Kachdi

Crispy snacks made with besan(Gram flour) and onion.

Ingredients:

Besan(Gram flour) – 1/2cup
Rice flour- 2 tbl spoons
Onion – 3 medium sliced
Haldi/turmeric powder – 1/4 tbl spoon
Mirch/chili powder – 1/4 tbl spoon
Green chili – 2- chopped

Oil – 2 tbsp to make mixture
Oil – for frying
Salt

Instructions:

  • Take besan in a bowl. Add salt, chopped grren chili, turmeric and chili powder.
  • Add 1 tbsp rice flour.
  • Add sliced onion.
  • Add 2 tbsp oil and mix all the ingredients together.
  • Sprinkle some water while mixing. You can use your hand to mix it properly.
  • Don’t use much water as we have to keep the mixture dry.
  • Now heat oil. Make round and flat pieces from this onion mixture and deep fry it from both the sides.
  • Keep flame on medium.
  • Once one side turns golden, flip and cook another side.
  • Once cooked from both the sides, take it out and serve hot with chutney or sauce.
