How to Make Corn Mayo Sandwich

Ingredients:
Bread – 4 slices
mayonnaise – 2 tbsp
Sweet Corn – 1/4 bowl
Pepper powder – 1 pinch
Red Chilli or red Bell Pepper (optional)
Butter – 2 tbsp

Method:

Take corn and mayonnaise in a bowl.

Add a pinch of pepper powder.

Mix well.

Apply Butter on one side of breads.

On the other side of one bread, spread a thick layer of mayonnaise and     corn mixture evenly.

Place few sliced pieces of red chili or red bell pepper on it.

Cover it with another bread slice.

Heat a tawa/pan.

When tawa/pan is medium hot add 1/2 tbsp butter on it.

Now place the sandwich on tawa/pan with spreading the butter.

Now place a flat surfaced plate on the sandwich. On top of plate, place a weight.

Toast like this for few seconds.

When base becomes brown, flip it.

Again add 1/2 tbsp butter, spread it and place the plate and weight on it.

Again toast for few seconds on low flame till the base become golden and crisp.

Once sandwich is brown and crisp from both sides, remove the plate.

Serve Sandwich hot with tomato ketchup and green chutney.

Ingredients:

For Dough-
Plain flour / Maida – 1 cup
Salt – 1/4 tsp
Water

For Filling –  
1 Onion – chopped
1 cup Cabbage – greted
1 cup Carrot – grated
1 cup Beans – finely chopped
1 tbsp Soy Sauce
1/2 tbsp Vinegar
Salt – 1/4 tsp
1 tbsp Chili Sauce
1 pinch Pepper powder
1 cup Cheese – grated
Oil – 2 tbsp

Instructions:

  • Mix the plain flour/maida and salt and knead to a stiff dough with water.
  • Once dough is ready cover and keep aside.
  • Heat oil in a pan. Add Chopped Onion and saute for 1 minute.
  • Add chopped Beans, grated carrot, grated cabbage.
  • Stir fry vegetables on medium to high flame for 2 to 3 minutes.
  • Now add 1/4 tsp salt, 1/2 tbsp Vinegar, 1 tbsp Soy Sauce, 1 tbsp Chili Sauce and mix well.
  • Add 1/2 cup grated Cheese and mix well.
  • Half of the cheese I used while stuffing.
  • Sprinkle some pepper powder mix well and switch off the stove.
  • Knead dough once again.
  • Spread oil on your both palms and divide dough into smooth equal sized balls.
  • Flatten and roll it into a thin circle.
  • Cut it with a round shaped sharp cutter.
  • Place a generous amount of stuffing in centre.
  • If you want momos to be more cheesy add some grated cheese on top of it. This is optional.
  • Bring both side edges together. Make pleats on both the side and join edges together by pressing with your fingers.
  • Now bring water to a boil and Cook Momos on steam for 6 to 7 minutes. I have used an electric rice cooker for steaming.
  • When momos are cooked a shiny sheen appears over them.
  • Serve Cheesy momos hot with spicy chili or tomato – chili sauce.

Ingredients:
2 bowls boiled Pasta
1 chopped Onion
1/2 sliced Capsicum
1/2 sliced Red Bell pepper
1 Carrot sliced
1 tbsp Red Chili Sauce
1 tbsp Tomato Sauce
1 cup grated Cheese
Salt as per taste
1/2 tbsp oil
1 tbsp Butter

Method:

  • Heat 1/2 tbsp oil in a pan and add 1 tbsp butter.
  • Add chopped onion.
  • Add Sliced Carrot.
  • Add sliced green and red Bell Pepper.
  • Sprinkle some salt.
  • Add Chili and Tomato Sauces. Mix well.
  • Add boiled Pasta.
  • Mix well and saute for few seconds.
  • Add grated Cheese and mix well with pasta.
  • Turn off the flame and sprinkle some more grated Cheese.
  • Serve hot.

This recipe is an all time kid’s favorite recipe and is a great option for desserts as well.

How to Make Sweet French Toast:

Ingredients:
Egg -2
Bread – 2 slices
Sugar – 2 tbsp
Vanilla extract – 1/2 tsp
Milk – 1/4 cup
Icing / powdered Sugar – 1 tbsp
Vegetable Oil – few drops
Butter – 1 tbsp

Method:

Break eggs in a bowl. Add two tbsp sugar.

Beat well egg and sugar together.

Add Vanilla essence powder/liquid and mix. I am using Vanilla powder. You can use Vanilla essence liquid as well.

Add 1/4 cup of milk and beat again.

Heat tawa/pan. Pour few drops of oil just to avoid burning of butter.

Put 1 tbsp butter on tawa and melt.

Dip the bread slices in the egg mixture from both the sides.

Place it on the hot tawa.

Cook both sides until golden brown on medium flame.

Once golden from both the sides take it out. Repeat same steps for other bread slice.

Sift some icing sugar(optional) on top of it and serve hot.

Chickpeas/Kabuli Chana – 2 cups soaked in water for 6 to 8 hours
Onion – 1 finely chopped
Cucumber – 1/2 chopped
Tomato – 1 chopped
Green Chili – 2 finely chopped
Lemon juice – 2 tbsp
coriander leaves – chopped
Chaat masala – 1 tsp
Salt as per taste
Method:

  •  Pressure cook soaked chickpeas with 4 cups of water and 1 tsp salt till 4 whistle.
  • Drain Chickpeas and Cool completely.
  • Combine the Chickpeas/kabuli chana with the remaining ingredients for the salad.

Sattu Paratha Recipe

Sattu Paratha is a famous dish of Bihar region of India. The main ingredient of Sattu Paratha is sattu which is made of roasted chana/gram dal (powdered roasted grams).
It’s a delicious recipe. Sattu is mainly famous in state of Bihar, Jharkhand and UP. You can get ready made Sattu at groceries store. You don’t have to prepare it yourself.

Sattu ka Paratha is stuffed with spiced up sattu mixture.

How to make Sattu Paratha

Ingredients:

For Dough:
Wheat flour/ Atta – 2 bowl
salt – 1/4 tsp

For Filling:
Wheat flour/ Aatta – 2 cup
Sattu/roasted gram flour – 1 cup
Finely chopped Onion – 1
chopped Garlic – 3 to 4 cloves
chopped Ginger – 1 inch
chopped coriander leaves
Oil and spices from mango pickle – 1 tbsp
Lemon juice – 1/2 lemon
finely chopped green chillies – 2 to 3
Salt as per taste
Oil to shallow fry Parathas

Making Sattu Parathas:

  • For preparing the dough, add 1/4 tsp of salt in wheat flour/atta. Now slowly add water in small incremental quantities and knead soft and smooth dough.
  • Cover the dough with a wet cloth or kitchen towel.
  • For filling, take sattu in a bowl. Add all other ingredients mentioned for filling. Mix well all the ingredients.
  • Sprinkle some water to make the mixture a bit wet.
  • The filling should be slightly moist, neither powdery nor sticky.
  • Take a small portion from the dough and roll and flatten with your palm.
  • Roll it to a thick and small roti (approx 2.5 inch diameter).
  • Place a generous amount of the sattu mixture (approx 2 tbsp) in the middle.
  • Bring the edges of the dough around and seal the edges at the top, flattening the stuffed dough gently.
  • Now gently roll out the parathas into round shape of approx 5 to 6 inch diameter.
  • Heat a tawa. Place rolled-out paratha on the tawa to cook on medium heat.
  • When the bottom suface starts spotting with brown dots (about 1 to 2 min), flip it and cook another side.
  • When it’s cooked from both sides,  spread some oil evenly on the top surface.
  • After few seconds, flip again and repeat on the other side of the paratha.
  • Cook edges of the paratha by pressing it with spatula.
  • When both sides of the sattu paratha are cooked, remove it from heat. Serve with curd, pickle, baingan bharta.

Aaloo Tikki Chaat Recipe – Make Street style Aaloo Tikki Chaat at home

Aaloo Tikki Chaat is a famous north Indian street food. It’s basically shallow fried Aaloo/potato paties served with hot and spicy peas/matar curry, topped with tamarind and coriander chutney,yogurt, onions, black salt and sev.
You can find Aaloo tikki chaat in many street side food shops. It can be also easily made at home.

At the end of the post I have given link for green chutney and imli/tamarind chutney recipes. It’s better to prepare chutneys before you start preperation for aaloo tikki chaat.

Ingredients:

For Matar/Peas Chhole:
Dried Peas/Matar – 200 gm soaked for 5 to 6 hours
Onion – 1 chopped
Tomato – 2 chopped
Green Chilies – 2
whole Cumin/Jeera – 1 tsp
Chopped Garlic – 4 to 5
Chopped Ginger – 1 inch
Turmeric/Haldi powder – 1 tsp
Coriander powder – 1 tsp
Chili powder – 1 tsp
Garam masala powder – 1 tsp
Hing/Asafoetida – 1 pinch
Bay leaf/ tej patta – 1
Salt as per taste
Oil

For Aaloo Tikki:

Boiled and mashed Potato/Aalo – 4 to 5
Corn flour – 1 tbsp
Chaat Masala – 1 tsp
Green Chili – 2 chopped
Chili powder – 1/4 tsp
Black salt – 1/4 tsp
Chopped ginger – 1tsp
Salt as required
Oil for frying

For Aaloo Tikki Chaat:

Beaten Curd
Rosted Cumin/Jeera powder
Black Salt
Imli/Tamarind Chutney
Green chutney
Finely chopped onion

Method:

Making Peas/Matar Chhole

  • Pressure cook matar with 3 cups of water and 2 tsp salt. Cook till two whistle.
  • Meanwhile grind 2 chopped tomatoes to make puree. Keep aside.
  • Heat oil in a kadai.
  •  When oil is hot, add 1 pinch hing.
  • Add 1 tsp cumin and a bay leaf.
  • Add 4 to 5 chopped garlic. Saute till raw aroma goes off.
  • Add 1 Chopped Onion.
  • Add two slicedgreen chilies.
  • Saute till onion turns golden.
  • Add 1 tsp turmeric, 1 tsp chili and 1 tsp coriander powder. Mix well.
  • Add prepared tomato puree.
  • Cook till mixture thickens with continuous stirring.
  • Add Salt.
  • Once mixture thickens, add chopped ginger.
  • Add boiled peas/matar. Mix well.
  • Add 2 to 3 cups of water.
  • When it comes to boil add 1 tsp garam masala powder.
  • Let it simmer for 5 minutes.
  • Turn off flame. Matar chhole is ready.

Making Aaloo Tikki

  • Take mashed potato. Add 1 tsp corn flour, 1 tsp chaat masala powder.
  • Add 1/4 tsp chili powder.
  • Add black and white salt as per the taste.
  • Add chopped green chilies.
  • Add chopped ginger.
  • Now mix all these ingredients together with your hand.
  • Now grease your hands with oil.
  • Take a small portion from potato mixture.
  • Give it a round and flat shape using your hands.
  • Now heat 3 to 4 tbsp oil in a pan.
  • Place these round shaped tikkis in the pan.
  • Cook till lower side turns brown.
  • Now flip and cook another side.
  • Once tikkis are brown from both the sides, switch off the flame and take them out.

Serving Aaloo Tikki Chaat:

  • Take hot peas/matar choole in a bowl or deep plate.
  • Place tikkis (1 or 2 per plate) on chhole.
  • Spread 2 tbsp curd on it.
  • Spread 1 tbsp imli/tamarind chutney.
  • Spread some green chutney.
  • Sprinkle a pinch of black salt.
  • Sprinkle a pinch of roasted jeera/Cumin powder.
  • Add some chopped onion.
  • You can also spinkle some sev.

Methi Paratha Recipe – A Healthy and quick Breakfast

Methi Paratha is made of whole wheat flour and fresh fenugreek / methi leaves. It’s a popular paratha recipe.
Methi is very good for health. Methi paratha is easiest way to include methi in our diet.Dried Methi leaves known as Kasoori methi can be also used for making methi paratha but fresh methi leaves are always a better option.

As fenugreek is rich in fibre and antioxidants, it helps in flushing out harmful toxins from the body and thus, aids digestion, deal with constipation. Methi lowers blood pressure, reduces risk of heart disease, helps you loose weight.

How to make Methi Paratha:

Ingredients:
Wheat Flour/Aatta – 2 bowl
Fresh Fenugreek/Methi Leaves – 200 gm
Green Chili – 2 chopped
Onion – 1 chopped
Ajwayan/Carrom Seeds – 1 tsp
Salt – 1 tsp
Turmeric/Haldi powder – 1 pinch
Oil

Method:

  • Heat oil in a kadai or pan.
  • Add chopped onion and green chillies. Saute just for few seconds (6-7 seconds).
  • Add a pinch of turmeric powder and mix.
  • Add Methi leaves.
  • Add salt and cook for 1 minute. Don’t cook it for longer time.
  • Switch off the flame. Let it get cool.
  • Now take wheat flour in a container. Add 1 tsp carrom/ajwayan seeds.
  • Add cooked methi leaves and mix it well with flour.
  • Now slowly add water in small incremental quantities and knead soft and smooth dough.
  • Now divide the dough into equal sized small balls.
  • Now flatten the ball with hand. Sprinkle flour on the rolling board and roll it into medium rounds.
  • Now heat a tawa. Place the paratha on tawa.
  • Once one side is cooked, flip it and let cook the another side.
  • Now spread oil around the paratha.
  • Flip it and spread oil this side too. Cook it by pressing edges with spatula.
  • Once Methi paratha is evenly cooked and get golden spots on it, Methi Paratha is ready. Take it out from tawa.
  • Place a cube of butter on Methi Paratha and serve hot with Pickle/curd/sauce/Tomato chutney/Any curry.
  • Methi paratha can just  be had with chai/tea. Methi Paratha is also a good tiffin box snack and stay soft if packed in aluminium foil.

Upma | Vegetable Upma

Ingredients:
Roasted Suji/Rave/Semolina – 1 cup
Chopped onion – 1 medium
Chopped green chili – 2
Chopped Tomato -1
Thinly sliced carrot/gajar – 1
Thinly sliced capsicum – 1 small
Chana/Gram dal – 1 tbs
mustard seeds – 1 tbs
Curry leaves – 7-8
Oil – 2 tbsp
Salt

Method:

  • Heat some oil in a kadhai. Add mustard seeds. When it starts spluttering, add Chana/gram daal and Curry leaves.
  • Now add chopped onion and green chili. Saute till onion turns light golden.
  • Now add sliced carrot/gajar. Saute for few secs and add capsicum. Again saute it for few secs.
  • Meanwhile boil 2 cups of water in a pan.
  • Now add tomato. Cook until tomato becomes tender.
  • Once tomato becomes tender, add Salt and mix well.
  • Now add roasted suji/rava and mix well. Saute for few seconds.
  • Now add boiled water. Mix well and cook until it thickens completely. Keep stirring.
  • Now turn off the flame and serve hot.
